Peanut Butter and Chocolate Treat: Buckeyes
What is a buckeye, you ask? There are three kinds of buckeyes: a brown butterfly, a nut from a bush, and a yummy peanut-butter-and-chocolate treat that actually resembles the nut.
Buckeyes are a nice homemade gift for Valentine’s Day, or an afternoon snack with a cup of coffee.
This recipe is a half-batch, which we find is enough for a little treat for the family without creating too much temptation to overindulge.
Buckeyes
¾ cup peanut butter
¼ cup butter, softened
½ tsp. vanilla
2 ½ cups powdered sugar
1 cup chocolate chips
Mix together the peanut butter, butter, vanilla and powdered sugar with your hands. Press together and form into small balls. Place on waxed paper. In microwave, melt chocolate chips. Either dip the balls into the chocolate using a toothpick or drizzle melted chocolate over the balls with a spoon. Refrigerate until the chocolate is hardened.
